- 4 pounds potatoes, baked then mashed
- 1 1/2 cups minced shallots
- 3 cups shredded white cheddar, divided
- 3 cups sour cream
- 1 tablespoon salt (more or less to taste)
- 1/4 teaspoon ground white pepper

We baked our potatoes at 400 degrees F for 45 minutes – 1 hour until fork tender. We let them cool, peeled the skin off, and then mashed.
Step 1
Preheat oven to 350 degrees F. In a large bowl, mix the potatoes, shallots, and most of the cheese until well combined. Reserve enough cheese to sprinkle on top of the potatoes. Season with salt and pepper. Fold in the sour cream one cup at a time.
