Instructions

1. Prepare the Mashed Potatoes

  1. Place the potatoes in a large pot and cover with cold salted water.

  2. Bring to a boil and cook until fork-tender, about 15–20 minutes.

  3. Drain well and return to the pot.

  4. Add butter and warm milk, then mash until creamy.

  5. Season with salt and black pepper. Cover and keep warm.

2. Prepare the Steak

  1. In a shallow bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper.

  2. In another bowl, whisk together eggs and buttermilk.

  3. Dredge each steak in the flour mixture, dip into the egg mixture, then coat again in flour (double dredge for extra crispiness).

  4. Heat 1/2 inch of oil in a large skillet over medium-high heat.

  5. Fry steaks for 3–4 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.

3. Make the Gravy

  1. Pour off most of the frying oil, leaving about 4 tablespoons with the browned bits.

  2. Stir in flour and cook for 1–2 minutes, whisking constantly.

  3. Slowly add milk while whisking to avoid lumps.

  4. Cook until thickened, 4–5 minutes. Season generously with salt and pepper.

4. Serve

  • Place a serving of mashed potatoes and fried steak on a plate.

  • Generously pour gravy over both.

  • Serve hot with a side of vegetables or salad.
